Vegan Banana Chocolate Chip pancakes with Peanut Syrup




First off most of you know we are expecting baby number 2!!! So that is the reason and excuse I am using for not blogging lately. Morning sickness was really bad in the 1st trimester but I am 16 weeks and 2 days today!!! Yay!!! So since I am feeling better I want to get back to blogging. :-)



Now onto the pancakes........ I have been really wanting to try make pancakes for Zoe because all the ones in the store frozen or in the box has eggs in it or milk. So I bought all the ingredients I thought I would need and made them tonight! Zoe absolutely loved them! She kept telling me "yummmmmmmmmmmmy mommy!" and I got many hugs and her telling "thank you for my pancakes". So all I think now is why haven't I made these sooner?????? Here is what i did.......

Ingredients

  • 2 cups Bisquick Original
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 1 cup non-dairy milk (I used Zoe's vanilla almond milk)
  • 2 very ripe bananas, mashed 
  • 1/3 cup of chocolate chips


Peanut butter Syrup
  • ½ cup pancake syrup
  • ¼ cup peanut butter
  • about 1 tbsp non-dairy milk
  



Zoe helped me make the pancakes too. She was so excited!





 The pancakes turned out so fluffy




I made enough for Alex, Zoe, and I. And I still had leftovers to freeze for breakfast.




My hubby put peanut butter on his pancakes anyways so I made this and syrup and everyone  loved it! 




The pancakes and syrup together....It was so yummy!





 I can't get over how much she enjoyed them. Zoe loved them! So they are kid approved ;-)






Mac and Cashew Cheese


I cant remember if I have ever posted on my blog Zoe's favorite Vegan meal. she loves mac and cashew cheese. Its pretty easy to make too. So its a win-win for the both of us. But its very expensive. I paid almost $15.00 for a pound of raw cashews. That is why I dont eat very much of it. But its very yummy.....







First I soaked 1/2 of a pound of raw cashew in water till its just covered. For two hours atleast. (I have left it soaking over night and I got the same results)


Then I cook a 1/2 of a pound of pasta fully


 While the pasta is cooking I make the "cheese"


I drain the cashews and put the water that they were soaking in a side in a cup. And then I put my cashews in my food processor and add...

2 squeezes of lemon juice
1/3 of the cashew soaked water
1 teaspoons of minced garlic
1 Tablespoon of apple cider vinegar
Salt and pepper to taste.

I love salty cheese so if it was for me I would have added more then what I make for Zoe




 Then I puree till smooth




Then put the "cheese" in a mixing bowl




Then pour the macaroni in with the "cheese"  and fold it in
And your done!!!



 I put most of it in freezable containers but if you are going to freeze it you have to add 2 tablespoons of milk to it (I use almond milk for Zoe) and it helps it not to be so dry when you reheat it.

This is how i do it....





People ask me all the time how i not cook anything with cow protein because of Zoe's allergy. So i thought i would show you all one of our favorite meals....Shepherds pie. Its very easy.





For a substitute i of beef i cook with turkey burger




In my casserole dish i put just enough vegetables in to cover the bottom





I put mayonnaise, garlic powder, and soy butter in my potatoes




Then i pour my turkey buger on top of my vegetables




Then i drain my potatoes



Then i add my ingredients to my potatoes and mash them.(this is also the way i make and eat my mash potatoes at home.)

And I usually put turkey gravy on the bottom with the vegetables but i forgot to pick some up.
